Les bons temps: inside Ella at The Trilogy's new cocktail menu

Named after jazz legend Ella Fitzgerald, Hong Kong’s Ella at The Trilogy embodies the spirit of New Orleans through music, food and mixology. In its latest celebration of the American South, group beverage manager Makail Gurung has crafted Louisiana Gold, a cocktail menu blending the bold flavours of Creole culture and Southern tradition.

The new menu draws inspiration from the streets of New Orleans’ vibrant French Quarter, the iconic sounds of Dixieland jazz and the enduring influence of Ella Fitzgerald.

“Louisiana Gold is our tribute to the soulful spirit of New Orleans. We’ve crafted a menu that combines Creole tradition and southern flavours, creating a space where music, culture, and atmosphere come together,” says Gurung.

Punchy cocktails meet street-style food inspired by the bustling food trucks of New Orleans’ Tremé and Lafitte neighbourhoods in Gurung’s new menu. Live performances add the final touch, bringing the vibrant vibes of Bourbon Street and the French Quarter straight to Hong Kong.

Gurung has curated a menu featuring Legends and Lore cocktails. Drinks include the Classic Creole, a twist on the Margarita, infused with charred corn, coriander, Cointreau, fresh lime and agave syrup, celebrating Louisiana’s rich Creole history with Mexican and Southern flavours.

The Delta Julep, an ode to the Mississippi Delta, combines peanut butter fat-washed Grey Goose, Rémy VSOP, strawberry and mint to create an elevated take on the Southern julep.

The Wet Crescent Martini, a nod to New Orleans’ nickname, features Botanist gin, olive brine, dry vermouth and orange bitters with a Southern twist.

Gurung’s curated list of cocktails has been perfectly paired with a host of street food-inspired bites including Typhoon Shelter tater tots, NOLA lobster rolls, food truck-inspired tacos, and south-baked potato skins.

Ella at The Trilogy is a member of the Singular Concepts family. Founded in 2022, the group is led by co-founders David Sit, Arnaud Pothier, and Tiana Ludhani, together with Christopher Chan and Gagan Gurung, who have created coveted venues on Hong Kong’s scene.

– the venue brings to life the story of the road less travelled, exploring mountains and valleys in search of the camellia sinensis tea plant.
