The waits at Hae Jang Chon often result in crowds out the door, but once you’re seated at one of the round, group-friendly tables, things move fast. Lunch is $37 and dinner is $44, which gets you a long list of beef options like short rib, brisket, steak, beef belly, beef tongue, and intestine, plus pork belly in varying levels of thickness. The staff handles the grilling, so you can concentrate on wrapping up the meat in rice paper like it’s an art project. The banchan is fine, but the add-ons make things better: kimchi pancakes, soybean stew, and the finale of kimchi fried rice cooked directly on the grill at the end.
