Uncover Your Mum's School Dinner Secret: The 4-Ingredient Retro Cake Everyone's Talking About

A mother-daughter duo, Kate Keogh and her former school dinner lady mum, have taken TikTok by storm by sharing highly anticipated and nostalgic recipes for classic school dinner desserts. These "insider recipes" have quickly become viral sensations, resonating with millions of social media users eager to relive their childhood memories through taste.
One of the most popular recipes shared is the simple, yet beloved, school sponge cake, complete with sprinkle topping and a side of pink custard. Kate's mum, who worked as a school kitchen assistant, provided the authentic method for this five-ingredient classic, which many remember as the highlight of their school dinnertime. The video, posted under @kate_keo, garnered over 425,000 views, with comments flooding in from users exclaiming, "This looks just like the one we had at school!" and "It's bringing back so many memories." Kate's mum reminisced about her own school days, where puddings were limited to "rice pudding and tapioca," yet she still perfectly recalls the details for this cherished sponge.
To recreate the classic school sponge, you will need: For the sponge – 280g unsalted butter, 280g golden caster sugar, 280g self-raising flour, 5 eggs, and 2 tsp Madagascan vanilla extract. For the icing – 500g icing sugar and 5-6 tsp water. And for the iconic pink custard – one tub of custard and pink food colouring. The method involves creaming the butter and caster sugar until pale and fluffy, then adding the eggs and vanilla essence. Sieve in the self-raising flour and mix all ingredients together. Place the mixture onto a baking tray and bake for 30-35 minutes until golden. For the icing, combine icing sugar and water until it reaches a liquid consistency, then turn over the cooled cake, ice the flat side, and add sprinkles. Finally, add a splash of food colouring to the custard, heat it in the microwave, and serve.
Following the immense success of the sponge cake, Kate and her mum revealed another secret recipe for a treat known as a 'cracolet' or cornflake tart. Kate, who had previously gone viral for her mum's school chocolate cake, explained that this crunchy, gooey dessert was an eagerly awaited treat at her school. The video showcasing this easy-to-make creation quickly amassed a whopping 1.8 million views, with many users sharing that it had "unlocked a core childhood memory." Others remembered it by different names like "Cracknel."
To make the nostalgic cornflake tart (cracolet), the ingredients are: 60g butter, 4 tbsps golden syrup, 1 tbsp cocoa powder, and cornflakes. The method is straightforward: Place the butter in a pan along with the golden syrup and melt both down on the hob. Remove the pan from the hob, add the cocoa powder, and mix well. Pour a large portion of cornflakes into a mixing bowl, then pour the chocolate mixture over the cornflakes and mix thoroughly. Finally, place the mixture into cake cases and leave for one hour to set. Both recipes shared by Kate Keogh and her mum highlight the powerful connection people have to the simple, comforting desserts of their school days, bringing a delicious trip down memory lane to countless followers.
