Morristown-Based Food Truck The Colonial Grill Opening 2nd Location in Hoboken

Sun’s out, buns out, and no, we’re not talking swimsuits. This summer, Hoboken will welcome the arrival of an Afro-Colombian food truck serving burgers, loaded fries, cheesesteaks, and gyros. Operated by a father-son duo, The Colonial Grill, a Morristown-born-and-bred restaurant on wheels, has announced plans to open its second food truck in the Mile Square at 1 Newark Street.

William Valbuena opened The Colonial Grill in Morristown at 3 West Park Place in December 2015. Soon after, his son, Kevin Valbuena, joined the team, turning the business into the cherished father-and-son collaboration it’s known for today.

With the mobile restaurant’s social media platforms boasting over 400,000 total followers and 50 million online views, according to its website, people from all over the country, including Los Angeles, come to try the food truck‘s dishes. Now, Hoboken residents can get a taste without the added trip because The Colonial Grill is making its way to the Mile Square.

The Hoboken truck will open at 1 Newark Street on June 28th, 2025, from 2PM to 9PM. Kevin shared with The Hoboken Girl that while the goal is to operate daily, the truck will open this Saturday to start. As The Colonial Grill settles into its new spot, the business will announce future opening dates on its Instagram, TikTok, and website.

“This one’s been a long time coming, years of blood, sweat, and sacrifice led us here,” William and Kevin shared via an Instagram post. “We’re beyond blessed and proud to call Hoboken our second home and grow our Colonial Grill family even bigger.”

This won’t be the first time The Colonial Grill has graced the Mile Square with its Afro-Colombian eats. The food truck introduced itself to Hoboken foodies during the town-wide Cinco de Mayo event on May 5th, which saw a long line of customers down Newark Street.

Latin-inspired burgers, loaded fries, cheesesteaks, and gyros are what customers can find at The Colonial Grill. The menu features dishes like the Cheesesteak De Maduro, made with sliced ribeye and sweet plantain-infused caramelized onions, and the Grilled Chicken + Fries, served with marinated grilled chicken and hand-cut fries, and topped with garlic and cilantro sauce and truffle chimichurri.

What The Colonial Grill is most known for is its Patacón “Plantain” Burger, featuring Angus beef, melted American cheese, lettuce, tomato, red onions, and all three of its signature sauces (the garlic-cilantro, pineapple, and pink sauce). Instead of a bun, this is served between two crispy tostones. “This creation is more than just a burger,” the website reads. “It’s a testament to the ingenuity and rich traditions of our culture.”
