Austin Gets a Limited Pop-Up at Residence From a Chef with Michelin Experience
When Michelin finally came to Texas and issued stars in the November 2024 ceremony, no restaurants in the state earned more than one star. While Texas restaurants are still unpacking what that means, there is an interesting opportunity in Austin to check out what multiple-starred service and food is like, for a limited time. Chef Anthony Martin, who previously worked at three-starred Joël Robuchon at the MGM Grand in Las Vegas and two-starred Tru in Chicago, will host an intimate dinner series at a place called Residence, inside the former Sushi Bar ATX in the East Side.
Martin is the director of culinarystrategy and development at Adept Hospitality, the group that owns Sushi Bar. While he is usually based in Nashville, he moved to Austin to take over the space and set up Residence. The idea for this limited-run restaurant came, Martin tells Eater, from discussing how to capture a “very personal experience.”
“I think a lot of cooking at home, and cooking for friends and clients in their homes, is where I make the most impact and where I get to see the reaction of the guests,” Martin says of the idea to run a 10-seat restaurant in a converted craftsman home in East Austin that will offer two seatings a night. “It’s more intimate than the chef’s table, more intimate than a counter style restaurant… I’m choosing to do the majority [of the cooking] personally.”

Martin says that Residence will focus on food made using the French foundations of Joël Robuchon, with nods to his mentor there, chef Tomonori Danzaki as well as chef
Günter Seeger, who Martin also worked under at his namesake restaurant in Atlanta. “Where I found the most success is being pure and honest with my technique and respect for the ingredients,” Martin says about his style.
While Martin is up-front about serving a multi-course tasting menu at Residence, pinning down exactly what dishes he has been developing proves trickier. He reveals he is aging Muscovy ducks from Belle Vie Farm in Central Texas. “There’s definitely going to be pristine seafood. I’m looking at bringing some things in, scallops for example... I want to feature beef, for one or two courses, from Texas,” Martin says, adding that it hasn’t been terrible to taste-test the beef. He is also trying out local honey to use in desserts.
The team at Adept Hospitality overhauled the kitchen and all the interiors of the space to create a dining experience better suited to Martin’s food, but it will still offer counter service in a single room. “I don’t want to be going into a kitchen, coming out, describing each course, and going back into a kitchen,” Martin says. “This is very much like you’re at my house, at my kitchen counter, and I’m preparing everything for you.”
Reservations are available now on OpenTable for Residence, which will open on Wednesday, April 23. The cost is $295 per person, with optional wine pairings available for an additional fee. It will only be open for a limited time, but the hospitality group has not announced a closing date yet. It will be open Wednesdays through Saturday, and you can find it at 2600 East Cesar Chavez Street.
