An Unforgettable Evening of Wine, Cuisine, and Community: "Vines That ECHO" Winemakers Dinner to Benefit ECHO

 –  – ECHO (El Camino Homeless Organization) is proud to announce Vines That ECHO: A Winemakers Dinner, an exclusive fundraising event hosted by Vin13 Wine Bar, taking place Friday, June 6, from 5:30 p.m. to 10:00 p.m. at the stunning Copia Vineyards Willow Creek Estate, located at 999 Kiler Canyon Road in Paso Robles.

This elegant evening will showcase the finest that Paso Robles has to offer—exceptional local wines, gourmet cuisine, and a shared commitment to supporting those in need. Guests will enjoy a multi-course dinner crafted by acclaimed local chef Rachel Ponce, expertly paired with wines from Copia Vineyards & Winery, The Royal Nonesuch Farm, Ciento Cellars, and Vin13 Wine Bar.

After relocating from Chicago, Chef Rachel Ponce has quickly become a celebrated figure in the Central Coast food scene, founding her culinary venture Pair With and serving as resident chef and recipe developer for Edible San Luis Obispo Magazine. Known for her ability to blend food, beverage, and community, Chef Rachel brings her signature artistry and innovation to every course of this extraordinary meal.

The inspiration for the event came from Raymond Fairchild, owner of Vin13 Wine Bar, who was moved by ECHO’s work—particularly its focus on supporting families in crisis. “When I learned about the number of families with children being helped by ECHO, I knew I had to do something,” Fairchild shared. “Bringing together these incredible winemakers and Chef Rachel to support this cause is one small way we can help amplify ECHO’s mission and give back to the community that supports us every day.”

The evening will not only celebrate the region’s culinary excellence but will also support ECHO’s mission to provide shelter, services, and compassionate support to individuals and families experiencing homelessness in San Luis Obispo County.

ECHO’s mission since 2001 is to empower people in SLO County to make positive change by providing food, shelter, and supportive services.
