Six To Book: Hot Collaborative Dinners at Broadsheet's Debut Food Festival

The debut Dine Out program is out – with plenty for everyone.

Pull up a seat at The World’s Dirtiest Martini Bar, make a lunch date with the “lost dishes” of Thailand or head to a Creole tavern in Redfern. Or, do all of that and more: like how I will be playing Dine Out.

Throughout the week some very special teams are working together – often for the first time. Here are six collaborative, one-off events to book now.

Star Melbourne chef and pop-up queen Rosheen Kaul is cooking with Brendan Pang at Ho Jiak on Dine Out’s Friday night – but before that, she’s hitting a beachy kitchen. On Wednesday August 13, Kaul will join head chef Luke Churchill at Bronte’s Table Manners. He’s bringing his London lens to a one-off set menu, ready for Kaul’s “Chinese-ish” flavour bombs to ramp it up. The menu is yet to be announced, but these tables will be hot property – so book quick.

Executive chef Andreas Papadakis of Melbourne pasta institution Tipo 00 is joining Alejandro Saravia in his Morena kitchen on Wednesday August 13. The pair will cook through Italy and Argentina’s history, serving up pasta and asado aplenty. After a suitably Italo start there’ll be eggplant escabeche and a zesty crudo, then a share-style feast that includes a whopping veal Milanesa with chimichurri.

To finish, a chocolate alfajor with dulce de leche semifreddo and fermented berries, followed by Papadakis’s signature “Tipomisu”.

In Chatswood. find the left-field collab we’ve been missing: northern Chinese meets the Anglo-Indian flavour of Derrel’s founder Brendy King. The BYO Parramatta Road favourite burst onto the scene with exceptional curries and a funky fit-out. The chef returns to the brief with The Lamb Lab’s Simon Jing (who’s behind the “super lamb soup” at Shang Lamb in Hurstville). Expect a one-off, all-day menu that brings it all together on Saturday August 16.

PS40 co-owner Michael Chiem acquired a 1977 Bedford RV last year and turned it into a moving, shaking, cocktail-making machine. Now she’s ready to be parked up at events, festivals and celebrations near you. What better excuse to rev it up than Broadsheet’s first-ever Dine Out festival? Hit Public House Petersham – from 4pm on Saturday August 16 – for a carpark party with some of the most inventive cocktails (and pizza specials) in the city. Toot, toot!

Tiny Darlo izakaya Nomidokoro Indigo is crossing the street, taking over The ’Tah’s handsome downstairs public bar on Sunday August 17, with Japanese-meets-Aussie cocktails, an izakaya-inspired Sunday roast and umami-forward snacks. Rotating DJs will lean into Japan’s love of jazz, funk and soul. Sugoi!

Hey Rosey is the little venue that could. The wine bar on Orange’s main street makes a spectacular case for regional dining: 20 or so people piled into a skinny space – about three metres wide – that feels like your friend’s living room, with good wine and standout food.

Chef Hugh Piper (ex-Dear Sainte Eloise) is zipping to Newtown, bringing plenty of country produce for a Sunday sesh at Odd Culture. Together with exec chef Alex Haupt, he’s serving an à la carte menu of punchy small plates.

The exact dishes are yet to be locked in, but you can be sure western NSW’s produce will be at the front. Maybe Hugh’s ricotta with foraged mushrooms and confit garlic, or silky oeuf mayonnaise. Fresh pasta is likely, as is a tight list of wines from Orange.
