Want a refreshing and light snack for summer? Try this Madhuri Dixit's watermelon and feta cheese salad. It helps keep your body cool and hydrated.
Four cups diced Watermelon, one cup diced Muskmelon, one diced Cucumber, one small Onion, sliced, 5 to 8 olives, 50 gms feta cheese, one cup Mint leaves, a handful of pine nuts, half a teaspoon of lemon zest or lemon juice, one-fourth cup balsamic vinegar, one-fourth cup olive oil, one-fourth teaspoon salt, one-fourth teaspoon of pepper and pinch of sugar (optional).
Scoop small balls of watermelon and combine it with cucumber, onion, muskmelon and olives. Mix it well.
Now, sprinkle feta cheese on top, add a handful of pine nuts and mint leaves. Combine all the ingredients.
Now, take a small bowl and add balsamic vinegar, olive oil, salt, black pepper, and sugar. Mix this together.
Now, add prepared dressing to the salad with lemon zest or lemon juice and toss it well to combine all the ingredients. Serve this immediately.
