Alex Drummond's Husband Shares His Smash Burger Recipe

Mauricio Scott has been spending more time in the kitchen and Alex recently captured his first attempt at smash burgers. Judging by her reaction, it won't be his last! She gave us a behind-the-scenes look at his method on Instagram while Mauricio explained the entire process. His setup included a built-in griddle on the stovetop, plenty of chopped onions, ground beef, seasoning, buns, and cheese. And while he admitted he'd never made this burger recipe before, he certainly looked like a professional.

First step: Onions—and lots of them. "Lay down the onions," Mauricio explained, spreading chopped white onions all over the griddle. "And then you put the patty over them." Instead of mixing the onions into the beef, he placed round balls of ground beef directly on top of the onion piles, letting the flavors meld together as they cook.

Next, comes the fun part. "You come in and smash 'em!" Mauricio said, pressing the patties with a large spatula until they were super thin. To keep them from sticking, he used a small square of parchment paper between the spatula and the meat. (Pro move, even for a first-timer!)

Once the burgers started sizzling, he seasoned them with Lawry's seasoning salt and black pepper (though Alex requested hers without pepper). The griddle was working its magic, the onions were caramelizing, and Alex says the kitchen smelled amazing.

While the burgers were crisping up, Mauricio topped them with pepper jack cheese and let it melt into the patties. Meanwhile, Alex zoomed in on baby Sofia, who was hanging out in her bouncer on the floor. "And here we have our sous chef, looking cuter than ever," she said. Sofia, in true newborn fashion, looked completely unimpressed by her dad's cooking skills.

Their dog George, on the other hand, was *very* invested. As soon as the cheese came out, he locked in, patiently waiting for his moment. Naturally, the "cheese tax" was paid before they moved on to the next step.

To finish, Mauricio toasted the buns directly on the griddle to get them warm and lightly golden. Then, he stacked two cheesy, crispy patties onto each bun for perfectly cooked double-smash burgers.

"This was so unbelievably yummy," Alex wrote alongside a photo of the finished meal. Not bad for Mauricio's first time! Now, what's next on the weekly dinner menu?
