Sonofai Revolutionizes Frozen Tuna Inspection with Fujitsu AI Technology

Fujitsu Limited, Sonofai Inc., Ishida Tec Co., Ltd., and Tokai University have jointly announced the development and upcoming launch of an automated inspection device designed to determine the fat content of frozen albacore tuna without damaging the product. This innovative device utilizes Fujitsu's advanced AI technology and is spearheaded by Sonofai Inc., a Japanese startup focused on integrating digital innovation to preserve traditional artisanal techniques. The collaboration also includes contributions from Ishida Tec Co., Ltd., a food processing equipment manufacturer, and Tokai University, which is actively promoting innovation within the food processing sector.
The new inspection device, named SONOFAI T-01, is scheduled for release in June 2025. Sonofai plans to initially target the seafood processing industry and fisheries cooperatives in Japan, with aims to expand its reach globally. This initiative is particularly timely, considering the increasing global demand for high-quality tuna, as evidenced by a 25% increase in demand over the past 20 years, according to the Japan Fisheries Research and Education Agency.
The SONOFAI T-01 leverages Fujitsu's ultrasound analysis AI technology, a key component of the Fujitsu Kozuchi AI service. It stands out as the first device capable of non-destructively assessing the fat content of frozen tuna. This eliminates the need for traditional methods that rely on skilled workers visually inspecting thawed cross-sections of the tuna tail. These conventional methods are not only labor-intensive and time-consuming but also prone to inconsistencies due to subjective human judgment and a scarcity of skilled personnel.
The device promises significant improvements in efficiency and accuracy. It can complete a full inspection of a tuna specimen in just 12 seconds and requires only one operator. This offers potential labor and operational efficiency savings of up to 80%. By enabling rapid screening of large quantities of frozen tuna, the SONOFAI T-01 reduces the workload on skilled workers, streamlines the selection process, and helps to lower costs while addressing labor shortages. Furthermore, it enhances accuracy and minimizes the economic risk associated with mislabeling high-value, fatty portions of the fish, known as "bintoro".
