Masterchef's Declan Cleary Shares His Fave Sydney Banh Mi

Published 1 day ago3 minute read

“Declan’s my name and fish is my game.” If you watched Masterchef: Secrets & Surprises in 2023, you’ll be well-acquainted with the young man’s catchphrase. Though he ultimately placed third, he’s currently back on our screens for a second shot at glory with Back to Win. Here’s where the North Shore-raised tradie and fish whisperer likes to eat around town.

I’m loving every second. It’s wild being back in that kitchen again. Competitive, inspiring and full of heart. I’m pushing myself harder than ever, and it’s showing in the food.

Nothing hits like a banh mi from Marrickville Pork Roll. Cheap, crunchy, packed with flavour. It’s comfort food done right.

The Shop in Bondi. The gypsy ham sangas and meatball salads are beasts, but still always feel fresh and light. It’s my reliable pitstop when I’m running around town.

Bar Copains in Surry Hills. Intimate and relaxed with a banging wine list. It’s the kind of place where you can slow down, share plates and have great conversation.

Saint Peter in Paddington. Josh Niland is a seafood magician, and dining there always reminds me why I love cooking. The set menu is a must, but if you can’t score a table in the restaurant, the bar menu is unbelievable also.

Salty Rooster in Queenscliff – the Japanese rooster burger. Umami-packed teriyaki sauce, fresh cucumber and pickled carrot. It absolutely slaps any day, especially with some of the elite chicken salt chippies.

Samjon at Warringah Mall. Freshness is never compromised, it’s a family run machine. Kenny is the seafood guru and will always be happy to help with any occasion.

I’m heading straight to Belgrave Cartel in Manly. It’s got that laidback, slightly grungy charm I love. I’d grab one of the toasted sandwiches (the Reuben if it’s going) and a Negroni or cold drip, depending on the mood. Always hits the spot.

Spice I Am in Surry Hills. The flavours are bold, the servings are generous, and sharing a spread of Thai dishes always gets everyone talking. It’s loud, fun, and packed with punch, just how a group dinner should be.

Da Orazio. The hardest part is choosing which pastry you aren’t getting. Made fresh every day. Detailed and simple pastry selection.

Restaurant Sixteen in Neutral Bay. The secret is out. My favourite omakase, chefs’ degustation and the focus is definitely on the incredible produce and food you are plated up by chef Toru.

A toasted ham and cheese jaffle with Dijon mustard, maybe a fried egg if I’m feeling fancy. Washed down with a cold ginger beer … heaven.

Masterchef Australia: Back to Win continues Sunday at 7pm, and Monday to Wednesday at 7:30pm on 10 and 10 Play.
